Bati chorchori

Today, we’re going to share with you a delightful Bengali recipe called Bati chorchori, which is a mouthwatering broccoli and potato curry. Get ready to be transported to the vibrant streets of Kolkata with this sensational dish!

You will need:

broccoli
medium-sized potato
cinnamon
turmeric
ginger
onions
garlic
mustard seeds
garam masala
red chilli powder
coriander powder
chilli
cumin
sugar
salt
cilantro or parsley
roasted salted cashews


Procedure:

Heat your cooking pot and add some oil. Once it’s hot, toss in the cumin, cinnamon and mustard seeds and let them sizzle and pop, releasing their aromatic flavours.

Next, add the diced onions, chillies, ginger, and garlic. Saute them until they turn golden brown and become fragrant.

The broccoli florets and diced potatoes. Stir them gently, ensuring the vegetables are coated with all the spices. Sprinkle in the turmeric powder, red chilli powder, coriander powder, garam masala, salt, and just a pinch of sugar to balance the flavours.

Cover your pot with a lid and let the simmer on low heat. Keep a close eye on it and stir it occasionally, ensuring the vegetables are cooking evenly.

Once the broccoli and potatoes are tender and cooked to perfection, remove the lid and let the curry thicken slightly.

Turn off the heat and garnish the dish with freshly chopped cilantro or parsley and roasted salted cashews.
