Dried Fruit – Khoshaf
If you’re looking for a simple dessert to satisfy your palate, why not try making a quick and easy compote using Khoshaf, a traditional dried fruit compote? The great thing about this compote is that you can enjoy it hot or at room temperature, so it’s perfect for the colder months when you want something to warm your heart and ward off the chill. To prepare Khoshaf, simply pour boiling water generously over raisins or any other dry fruit of your choice. This delicious treat is not only delicious but also a great way to enjoy the flavours and benefits of dried fruit all season long.
You will need:
2 cups of rice
3-4 cups of mixed dried fruit (raisins, apricots, plums, pears, cranberries, almonds)
4 cups water
3 tablespoons lemon juice
3-4 tablespoons sugar
¼ teaspoon cinnamon
Procedure:
Put all the dried fruit in a 4-liter pot, add water, sugar and lemon juice and mix well. Bring to a boil for 5-10 minutes until the fruit is soft but not mushy. Turn off the heating. The pot is then wrapped in a heated blanket to macerate the contents better.
Serve cold or at room temperature. Place the rice in a large bowl and top with the fruit. Serve on its own as a breakfast, dessert or snack.
