Red Lentil Soup

Lentils are used in many different dishes around the world. Lentil dishes are most popular in South Asia, the Mediterranean, West Asia, and Latin America. Red lentils are rich in nutrients and have anti-cancer properties, so they are suitable for regular consumption. However, they are not a common ingredient in Chinese cuisine, so few people are interested in them. Today I will introduce you to red lentil soup, which can be used for its high nutritional value, easy preparation, and delicious taste. If you don’t believe it, try it, you will love it…

You will need:

olive oil
1 cup red lentils
1 small shallot and 1 small onion
3 cloves of garlic
1 teaspoon ginger powder
2 teaspoons Madras curry powder
1 1/2 cup coconut milk
1 potato
3 cups vegetable broth
1 carrots
1 green onions
pumpkin seeds
1 tablespoon lemon juice (or lime)
salt and pepper

Procedure:

To prepare this red lentil and coconut soup, boil olive oil in a saucepan. Add the chopped shallot, onion, and garlic, and cook until fragrant and slightly softened. Next, add the Madras curry powder and ginger powder, stirring them into the mixture.

Then, it’s time to add the red lentils, coconut milk, chopped carrots, and diced potatoes. Give everything a good stir to combine the ingredients. Pour in the vegetable broth, cover the saucepan, and let it simmer for about 20 minutes or until the vegetables and lentils are soft.

Once the soup is cooked, blend it until smooth using an immersion blender. If you don’t have an immersion blender, transfer the soup to a regular blender and blend it in batches. Just be cautious when blending hot liquids.

After blending, add the lemon juice (or lime juice if you prefer) and season with salt and pepper to taste. Stir well to incorporate all the flavours. Finally, you can garnish the soup with freshly chopped parsley, sliced green onions, and a sprinkle of pumpkin seeds.

Serve the red lentil and coconut soup hot and enjoy!
