Bean & Beetroots Salad

This beetroot and bean salad are delicious and nutritious. I saved this recipe for just the right moment, and as I move less away from Easter and embrace the freshness of spring, it’s an excellent time to highlight it. Many of us spend endless hours in the kitchen preparing complicated meals, but no law states that a meal must be intricate to be enjoyable. Today, I am excited to share a dish that falls into the quick and easy category while being nutritious, delicious, and colourful. You can’t beat that!

You will need:

3 beetroots
2 carrots
1 onion
1 can of red kidney beans
2-3 tablespoons vinegar
2-3 cucumber pickles
fresh parsley
juice of a lemon
1 teaspoon ground coriander
salt and pepper

Procedure:

Boil the beetroots until tender. Once cooked and cooled, peel and cut them into big chunks. Add the beans and beetroot chunks to a large bowl. Next, incorporate all the remaining ingredients: lemon juice, vinegar, onions, cucumber, parsley, carrots, and spices. Mix well to combine all the flavours, and serve either cold or at room temperature. These vibrant beetroots and bean salad are a feast for the taste buds and the eyes, making it a perfect addition to any meal. Special Properties: circulates qi, disperses cold, resolves dryness
Beetroots are not recommended for someone with a history of kidney stones, since they contain Oxalic acid.
