India Egg Curry

Indian Egg Curry, known for its rich flavours and aromatic spices, is a dish that brings warmth and comfort to the dining table. Let’s dive into the ingredients and steps involved in creating this dish.

You will need:

6 hard-boiled eggs, cut in half
1 shallot, finely chopped
5 garlic cloves
1 teaspoon mustard seeds
2 whole cloves
1/2 teaspoon cinnamon powder
1/4 teaspoon green cardamom powder
1/2 teaspoon ginger powder
2 green chili peppers, slit
1 teaspoon cumin seeds
1 teaspoon garam masala
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/4 teaspoon fennel seeds
4 curry leaves
1/4 teaspoon Kashmiri curry powder
1/4 teaspoon Mild Madras curry powder
3 ripe tomatoes, chopped
3 tablespoons tomato passata
1 cup coconut milk
Fresh parsley, for garnish
Salt, to taste

Procedure:

Heat a tablespoon of oil in a pan over medium heat. Add the mustard seeds and let them splutter.
Stir in the cloves, cinnamon powder, green cardamom powder, and ginger powder. Cook for a minute until fragrant. Add the slit cumin seeds, followed by the garam masala, coriander powder. Stir in the Kashmiri and Mild Madras curry powders, turmeric powder, and fennel seeds. Stir well.

Add the chopped shallot, chilli peppers and garlic, sautéing until the shallot turns translucent. Add the chopped tomatoes and tomato passata, cooking until the tomatoes soften and the oil separates. Pour in the coconut milk and bring the mixture to a simmer. Carefully add the hard-boiled egg halves, coating them gently with the curry sauce. Allow to simmer for about 5-7 minutes. Add curry leaves and season with salt to taste. Stir gently to combine. Transfer to a serving dish, garnish with fresh parsley, and serve hot with rice or naan.

Indications – Hot eyes, sore throat, thirst after delivery, scalds, dysentery, cough caused by dryness, celostomia, threatened abortion, restlessness.
Contraindication is contraindicated in case of phlegm, retained fluid, and indigestion.
