Aubergine salad with chicken

You will need:
1 olive oil
1 onion, chopped
2 large aubergines (eggplants)
300g cooked chicken breast, shredded
100g walnuts, roughly chopped
3 tablespoons mayonnaise
Fresh parsley, chopped (for garnish)
Salt and pepper to taste
Procedure:
Preheat your oven to 200°C. Slice the aubergines in half, score the flesh with a knife, drizzle with olive oil, and sprinkle with salt. Roast for 25-30 minutes until they are tender and lightly browned.
If you haven’t already, cook the chicken breast in a pot or boil it until fully cooked. Let it cool and then shred it into small pieces.
Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.
Once the aubergines are roasted and cooled, scoop out the flesh and chop it into bite-sized pieces. Combine the chopped aubergine, onion, shredded chicken, and walnuts in a mixing bowl.
Gently fold in the mayonnaise, ensuring that all ingredients are well-coated. Sprinkle with mayo in a julienne shape—season with salt and pepper to taste.
Transfer the salad to a serving platter, garnish with freshly chopped parsley, and enjoy this vibrant dish cold or at room temperature.
