Delicious White Miso Soups
White miso soup is a Japanese dish that combines the rich umami miso flavour with various ingredients to create a nourishing broth. This recipe is perfect for a delicious and warming soup that is perfect for any time of year as a light meal or appetiser. You will need:
olive oil
5 grams chopped wakame seaweed
2 tablespoons of white miso
3 cloves of garlic
2 cans of chicken broth
4 cups of water
1/4 teaspoon cayenne pepper
black pepper to taste
chopped green onion for garnish
Procedure:
In a large pot, heat the olive oil over medium heat. Once the oil is hot, add the minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth and water, then stir well to combine. Bring the mixture to a simmer. Add the chopped wakame seaweed to the pot and allow it to rehydrate in the simmering liquid for about 2-3 minutes.
In a small bowl, combine the white miso with a few spoonfuls of the warm broth to create a smooth paste. This helps the miso to dissolve evenly into the soup. Stir the miso paste back into the pot, making sure it is well incorporated. Season the soup with cayenne and black pepper to your taste. Let the soup simmer for an additional 5-10 minutes, allowing the flavours to meld together. Once ready, ladle the soup into bowls and garnish with chopped green onions before serving.
