Armenian Zucchini Salad with Walnuts

Summer is the perfect time to indulge in fresh vegetables, and this Armenian zucchini salad sprinkled with walnuts is a delightful addition to your menu. Let’s take a look at how to prepare this colourful immersion of flavours.

You will need:

2 small-sized zucchinis, sliced into rounds or half-moons
1 cup walnuts, roughly chopped
½ cup sour cream
100 g Champignon mushrooms, sliced
1 back chicken quarter, cooked and shredded
1 tablespoon olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Fresh herbs (optional, for garnish)

Procedure:

Start by washing and slicing the zucchinis into rounds or half-moons. If you have fresh herbs, wash and chop those as well. In a skillet, heat a small amount of olive oil over medium heat. Add the sliced Champignon mushrooms and zucchinis and sauté until they’re golden brown. Set aside to cool. In a large mixing bowl, combine the sliced zucchinis and mushrooms. Next, add the shredded cooked chicken quarters. In a small bowl, mix the sour cream, lemon juice, salt, and pepper, then drizzle this dressing over the salad mixture. Toss gently to combine. Add a sprinkle of chopped walnuts. Finally, garnish the salad with fresh herbs if desired. Serve immediately for the best flavour, or chill in the refrigerator for an hour to meld the flavours.

Indications – Diarrhoea, oedema, frequent urination, leucorrhea, weakness after illness, diabetes, uterine bleeding, hypogalactia, poor appetite, consumptive disease.

Walnut – Property – Sweet, warm; kidney, liver and large intestine meridians entered.
Actions -Tonify the kidney, warm yang and moisten the intestine.
Indications – Cough and dyspnea due to lung and kidney deficiency, soreness and limpness in the lumbar and knees, spermatorrhea, frequent urination, dryness in the intestine and constipation.
Cautions – It is contraindicated in cases of yin deficiency with effulgent fire, cough and loose stool due to phlegm-heat.
