Punjabi Kadhi Pakora
Punjabi Kadhi Pakora is a classic and flavorful Indian dish that hails from Punjabi cuisine. It combines a tangy and spiced yoghurt-based curry with crispy and savoury deep-fried fritters called pakoras. This dish is loved and cherished by people all over India and is known for its rich and aromatic flavours.
We need:
canola oil
ghee
1/4 cup non-dairy yoghurt
1/4 Kashmiri chilli powder
4 cups broth
1/2 tsp turmeric powder
2 tsp chickpea (gram) flour
0.5 kg baby spinach
2 onions
5 clove garlic
3 tsp cumin seeds
1 tsp methi seeds
1 Chilli pepper
2 dried red chillies
1/2 tsp ginger powder
1 green chilli
1/2 tsp Garam Masala
tamarind water
Procedure:
Start by whisking together yoghurt, Kashmiri chilli powder, turmeric, broth and besan (chickpea gram flour) until smooth. Set aside.
In a separate bowl, mix finely chopped spinach, onions, chillies, garlic, and spices such as turmeric, cumin, and besan add a little bit of water to create a flavorful pakora batter.
Next, heat canola oil in a deep pan to fry the pakoras. Dip spoonfuls of the pakora batter into the hot oil and fry until golden brown and crispy. Once the pakoras are ready, set them aside on a paper towel to absorb any excess oil.
Now, it’s time to make the kadhi. In a separate pot, heat ghee and add methi seeds, cumin seeds, and dried red chillies to release their aromas. Then, add in turmeric, add in the onion-ginger powder-green chilli mixture and cook until the onions are golden brown. Pour in the yoghurt and besan flour mixture, along with broth, add in chopped spinach, add a little bit of water and let the kadhi simmer on low heat. Be sure to stir occasionally to prevent any lumps from forming.
As the kadhi cooks, it will thicken and develop a rich and tangy flavour. Add in Garam Masala and a little tamarind water. Once it reaches the desired consistency, add in the fried pakoras and simmer for a few more minutes to allow the flavours to meld together. Garnish with fresh spinach and serve hot with steamed rice or roti for a wholesome and satisfying meal.
