Chickpea Curry

This dish is perfect for any occasion, packed with flavour and made from simple ingredients. Plus, it’s vegetarian and can easily be made vegan! Follow these simple steps to create.

You will need:

olive oil
2 tablespoons ghee or butter
1 onion
3 garlic
1 can of diced tomatoes
2 cans of chickpeas
2 teaspoons ginger powder
3 teaspoons Hot Madras curry powder
2 teaspoons cumin
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon paprika smoky
1 can of coconut milk
1/4 teaspoon cayenne pepper
Salt and black pepper to taste
parsley
lime juice

Procedure:

In a wok, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the garlic and ginger powder, cooking for 1-2 minutes until fragrant. Incorporate butter, Hot Madras curry powder, cumin, coriander powder, turmeric, smoked paprika and parsley. Add the diced tomatoes to the wok and let them simmer for about 5 minutes, allowing the flavours to meld. Pour in the coconut milk, chickpeas and cayenne pepper. Stir well to coat the chickpeas—season with salt and black pepper to taste. Bring the mixture to a gentle simmer.
Let the curry cook for 15-20 minutes, stirring occasionally. If it gets too thick, add a splash of water. Once cooked, remove from the heat and stir in the fresh lime juice for a zesty kick. Serve hot, garnished with fresh parsley over rice or with naan bread.
