Armenia Beef & Noodle Soup with Beans

You will need:

100 g of thin noodles
500 g beef, cut into bite-sized pieces
4 cups chicken broth
3 cloves garlic, minced
2 medium potatoes, peeled and diced
1 large onion, chopped
1 large carrot, sliced
1 tomato, diced
1 cup red kidney beans, cooked
Fresh parsley, chopped (for garnish)
Salt and black pepper, to taste

Procedure:

In a large pot, heat a splash of oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and diced tomato; cook for an additional 2 minutes until the tomato softens. Introduce the beef to the pot and brown on all sides for about 5-7 minutes. Pour in the chicken broth and bring it to a boil. Reduce the heat to a simmer and let it cook for 30 minutes. Add the diced potatoes, sliced carrot, and cooked red kidney beans. Stir well and season with salt and black pepper. Continue to simmer for another 30 minutes, until the vegetables are tender. Add the thin noodles and cook for an additional 5-7 minutes until they are cooked through. Finally, adjust seasoning if needed and serve hot, garnished with fresh parsley.
