Armenian Salty Cake

Today, I’m excited to share a fantastic recipe for Armenian salty cake, a savoury dish that embodies the rich culinary traditions of Armenia. Whether you’re celebrating a special occasion or simply craving a unique dish, this cake is sure to impress!

You will need:
For the Dough

400 gr. flour
250 gr. sour cream
2 pcs. egg yolks
100 gr. butter
Baking agent – as per container instructions
1/2 tsp. salt 
1/2 tsp. sugar 

For the Filling

600 gr. greased beef mince 
1 medium piece of onion
1 medium piece of carrot
1/2 bunch fresh coriander 
30 gr. butter 

Spices:

1 tsp. black pepper 
1 tsp. red pepper 
1 tsp. ground coriander seeds 
1 tsp. salt 

For Brushing

1 egg yolk

Optional Sweet Variant

To create a sweet version, consider adding walnuts, raisins, egg white, and sugar to the filling!

Procedure:

In a mixing bowl, combine flour, sour cream, egg yolks, softened butter, baking agent, salt, and sugar to create the dough. Knead until smooth and let it rest for 30 minutes. Meanwhile, prepare the filling. In a skillet, melt the butter and sauté the chopped onions and grated carrots until they are softened. Add the beef mince, coriander, and spices to the skillet and cook until the meat is browned. Allow it to cool.

Preheat the oven to 180°C. Roll out the rested dough on a floured surface into a thin sheet.
Place your filling on half of the rolled dough, then fold over the other half and seal the edges.
Brush the top with egg yolk for an appealing finish.
Bake in the preheated oven for about 30-35 minutes or until golden brown.
Let it cool slightly before slicing. Enjoy your Armenian salty cake warm or at room temperature!
