Kugel
Kugel is a traditional Ashkenazi Jewish dish often served on Shabbat and holidays. It is known for its versatility, allowing for a variety of flavours and ingredients. Today, we will look at a savoury kugel recipe that includes a variety of colourful vegetables, adding nutritional value and flavour.
You will need:
olive oil
10 small potatoes
3 pcs eggs
1 carrots
2 pcs zucchini (medium size)
2 onions
3 garlic cloves
1 tsp turmeric powder
80 g flour
1/2 tsp cayenne pepper powder
0.1kg chicken breast ham
chopped parsley
lemon
salt & pepper
Procedure:
Begin by preheating your oven to 190°C. Wash and peel the potatoes, carrots, and zucchinis. Grate all the vegetables, including the onions and garlic. In a large mixing bowl, combine the grated vegetables with chicken ham, turmeric, flour, cayenne pepper, and chopped parsley. Season with salt and pepper.
In a separate bowl, beat the eggs, and then add them to the vegetable mixture. Stir until everything is well incorporated. Drizzle some olive oil onto a baking dish to prevent sticking. Pour the Kugel mixture into the dish, spreading it evenly. Place the dish in the oven and bake for about 50 minutes, or until the top is golden brown and a knife inserted in the centre comes out clean. Once baked, allow the Kugel to cool for a few minutes before slicing. For a fresh taste, garnish with a small amount of lemon juice and chopped parsley.
