Oatmeal cake

You will need:

5 eggs
350 g rolled oats
200 ml milk
1 orange juice
30 g butter
1 tsp salt
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground cardamom
3 tbsp cornstarch

Cottage Cheese Filling

500 g cottage cheese
150 ml Greek yoghurt
50 ml honey
2 tbsp cornstarch
Raspberry jam
Dark Brown Sugar

Crispy Crumbs

50 g whole rolled oats
50 g walnuts, chopped
2 tbsp oil

Procedure:

Preheat your oven to 180°C and grease a cake pan.
In a large bowl, whisk together the eggs, milk, and melted butter until well combined.
In another bowl, combine the rolled oats, salt, baking powder, cinnamon, cardamom, and cornstarch.
Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
Fold in the orange juice, mixing gently.
Pour the cake batter into the prepared pan and spread evenly.
For the cottage cheese filling, blend the cottage cheese, Greek yoghurt, Raspberry jam, honey, sugar and cornstarch until smooth. Spread the filling over the layer of batter and smooth it out gently.
For the crispy crumbs, mix the rolled oats, chopped walnuts, and oil, then sprinkle them on top of the cake. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the centre comes out clean. Let the cake cool. Serve and enjoy!
