Chicken Do Pyaza
Do Pyaza, meaning “double onion,” refers to this classic North Indian curry, which features slow-simmered onions that caramelise beautifully, giving the dish a deep, rich flavour.
Do Pyaza is best enjoyed with tandoori roti or rice.
You will need:
olive oil
3 chicken quarters
6 cloves garlic, roughly chopped
2 white onions, finely chopped
400g+400g chopped tomatoes
140 g tomato paste
200 g coconut milk
1 tbsp garam masala
140 g new potatoes
6 shallots peeled and halved
1 tsp ginger powder
2 bay leaves
1 fresh green chilli
2 tsp Kashmiri chilli powder)
1 tsp turmeric powder
1 tbsp cumin
1 tbsp coriander powder
150 mls water
140 gms new potatoes
salt and pepper
1 handful chopped parsley curled
lemon juice
Procedure
Melt the olive oil in a wok over medium heat. Add the chicken quarters and sear until browned on all sides, then set aside. In a wok, add the bay leaves and chilli and fry for a few seconds. Add the onion and garlic, and fry for 8 minutes. As they begin to brown, add the chicken quarters.
Stir well and at this stage add Kashmiri chilli powder, ginger powder, turmeric, cumin and coriander powder. Fry for a minute. Add the chopped tomatoes and tomato paste, and mix well. Cook for 4 minutes.
Add the coconut milk, water, shallots and season to taste. Turn the heat to a low setting and cook the chicken curry for 20 minutes with the lid on. Stir halfway through the cooking process. Turn the heat off and add the garam masala. Leave the chicken to rest.
Meanwhile, bake sliced, seasoned potatoes at 200°C for 30 minutes. Add them to the curry, thinning with water if needed. Finish with parsley and lemon juice, and serve with rice or roti.
Onion – Property – Sweet, slightly pungent, warm; liver, spleen, stomach and lung meridians entered.
Actions- Relax the intestines, regulate qi, harmonise the stomach, strengthen the spleen, dispel wind-cold, promote digestion.
Indications – Poor appetite, indigestion, hypertension, affection of exogenous wind-cold without sweat, dysentery, hyperlipidemia, and nasal obstruction.
