1 large tomato, chopped
1 red chilli pepper
5 curry leaves
1 teaspoon turmeric powder
1 teaspoon mustard seeds
1 teaspoon cumin
1 dried red chilli pepper
Pinch of arafatida
2 tablespoons fresh cilantro, chopped
Salt to taste
2 tablespoons olive oil

Instructions:

In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the mustard seeds and cumin and cook until they start to pop. Stir in the chopped onion and sauté until translucent. Add turmeric powder, curry leaves, arafatida, slivered lengthwise red chilli pepper and dried red chilli pepper. Cook for another minute. Stir in chopped tomatoes and cook until soft. Add rinsed red lentils and 4 cups of water. Bring to a boil.
Once lentils are boiling, reduce the heat to low, cover and cook for about 20 minutes or until lentils are tender. Stir in tamarind pulp along with the soaking water. Season with salt to taste. Sprinkle with fresh cilantro before serving. This makes for a complete meal full of flavour and nutrients, perfect for any time of year.

Tamarind – In general the ancient Chinese medical texts cite that it enters the Stomach and Large Intestine. The flavor of Tamarind is sweet and sour, and it is considered to be cool in temperature.
