Singapore Satay Chicken Curry

If you love bold, fragrant flavours, then Singapore Satay Chicken Curry is a must-try dish! Although cooks traditionally serve satay on skewers, this recipe incorporates all the deliciousness into a hearty curry. It creates a satisfyingly rich meal that’s easy to prepare and requires no skewering.

You will need:
Satay Seasoning

1 1/2 tsp coriander powder
1 1/2 tsp cumin powder
1 1/2 tsp turmeric
1 1/2 tsp paprika
1 1/4 tsp Kashmiri chilli powder
1 tsp Madras curry powder
salt & brown sugar

Chicken

750g chicken breast, chopped
1/2 onion, chopped

Satay Sauce

2 tbsp olive oil
1/2 cup onion, chopped
4 garlic cloves, chopped
1 cup chicken broth
50g Thai green curry paste
3/4 cup peanuts, chopped
3 tsp dark soy sauce
1 tsp fish sauce
400g coconut milk
Cornstarch (for thickening)
1/2 red pepper, chopped
1/2 green pepper, chopped
1 small aubergine, chopped
1/2 zucchini, chopped
2 tbsp peanut butter
2 tbsp lime juice
crispy tofu

Procedure:

In a bowl, combine all the ingredients for the satay seasoning. Mix well and set aside. Heat olive oil in a large skillet over medium heat. Sauté the onion until translucent. Add garlic and continue to sauté until fragrant. Stir in the chicken pieces and cook until lightly browned. Add the satay seasoning and mix to coat the chicken evenly. Pour in the chicken broth and Thai green curry paste. Bring the mixture to a simmer.
Stir in chopped peanuts, dark soy sauce, fish sauce, and coconut milk. Mix well. Add the chopped red and green peppers, aubergine, and zucchini. Cook until the vegetables are tender. For a thicker sauce, mix cornstarch with a bit of water and add it to the curry, stirring well. Finish by stirring in peanut butter and lime juice to elevate the flavour.
Serve hot, garnished with chopped peanuts, crispy tofu, fresh red chilli, and parsley for a delightful finish!
