Elderberry syrup

The first person to mention elderberries was in the fifth century BC. Hippocrates recommended them as a laxative, diuretic, and gynaecological remedy. Druids and European pagans believed that elderberries were a mystical tree. It was said that this tree protected fairies, so it was important to pay respect to it when you came across it in the forest.

The syrup has become very popular since 1995, when an article was published stating that the berries have an antiviral effect against the flu. It is an excellent addition to cough syrup, adding both flavour and medicinal qualities. Elderberries have traditionally been used to make wine or stomach liqueurs.

You will need:

30 elderberry syrup
1 litre of water
750g cane sugar crystal
200 ml of hot water
4-5 lemons
1 tablespoon of citric acid

Procedure:

To prepare elderberry syrup, we will need:

Remove the green stems from the flowers and cut them into a large bowl. Do not wash the elderflowers. However, wash the lemon and place it on the flowers. This will press the flowers under the water. Pour over boiled cold water and pour the hot water directly onto the lemons and cover with a cloth for 24 hours. After 24 hours, strain through a cloth. Add one tablespoon of citric acid and sugar.

Heat on the stove until the sugar dissolves. Stir occasionally. The syrup does not need to come to a full boil. Prepare the bottles. Remove from the stove and pour through a funnel.

Then store in a cool, dark place. The syrup will last for several months this way.
