Baked Greek Chicken Quarters

Greek cuisine is part of Greek culture and has been depicted in paintings and texts since ancient times. Its influence spread to ancient Rome and then throughout Europe and beyond. Here is a simple and delicious recipe for baked Greek chicken quarters with the following ingredients:

You will need:

3 chicken quarters
1/2 cup Greek yoghurt (preferably full-fat)
1/4 cup olive oil
Zest of one lemon
1/3 cup lemon juice
5 cloves of garlic
2 tablespoons dried Italian seasoning
2 teaspoons salt
Black pepper to taste

Procedure:
Prepare the marinade:

In a bowl, combine the Greek yoghurt, olive oil, lemon zest, lemon juice, minced garlic, Italian seasoning, salt, and black pepper. Mix well until smooth.

Add the chicken quarters to the marinade, making sure they are completely coated. Cover and refrigerate for at least 1 hour, or overnight for maximum flavour. Preheat the oven to 200°C. Place the marinated chicken quarters on a baking sheet lined with baking paper or in a roasting pan. Bake for 40-45 minutes, or until the chicken is cooked through and golden brown. The internal temperature should reach 75°C.

To serve:

Let rest for a few minutes before serving. Enjoy your delicious Greek roasted chicken with sides such as roasted vegetables or salad: classic lemon potatoes, Greek salad with feta and a dollop of tzatziki or plain yoghurt.

It enters the Lung, Stomach, Large Intestine, and Liver. The flavour of Yogurt is sweet and sour, and it is considered to be cold in temperature. Warning: Do not use in cases of deficiency and cold in the middle fire Wei/Pi han xu with diarrhoea, and in cases of dampness Shi and phlegm Tan.
